At Coco Farm & Winery, at the foot of a mountain vineyard first opened in the 1950s,
wine is made from 100% Japanese grapes.
No herbicides or chemical fertilizers are used in the estate vineyards,
and fermentation in the winery relies mainly on native wild yeasts and lactic-acid bacteria.
Listening closely to what the grapes are saying—“this is the wine I want to become”—
the winery values bringing out each grape’s own character.
Based on the principle of matching varieties to the right sites, the winery selects grape varieties that can be grown naturally without forcing the land. Harvest is delayed until the grapes ripen slowly and fully. All grapes are picked by hand and sorted one by one, a level of care that reflects the terroir and flavor unique to this place.
