From December 15, 2025, Hoshinoya Fuji, Japan’s first glamping resort, will begin offering a winter-only menu for its “Gastronomic Wild” course dinner.
The program also offers pairings with Yamanashi wine, making it one to watch for food lovers.

About “Gastronomic Wild”
“Gastronomic Wild” is a culinary concept developed by Hoshinoya Fuji.
The course respects local ingredients and food culture nurtured at the foot of Mt. Fuji, uses cooking methods designed to bring out the ingredients’ full appeal, and adds a glamping character through skillet presentation and the use of fire.
Some of the winter-only dishes offered from December 15 are introduced below.
・Appetizer: “Giant Char Tartare, Flash-Smoked with Apple”
・Main Dish: “Charcoal-Grilled Beef Sirloin and Venison Loin”
・Dessert: “Spiced Compote and Basque Cheesecake”
One especially intriguing dish is the giant-char tartare. The delicately flavored fish is marinated and flash-smoked with apple chips for a fruity aroma, making it a plate that invites a pairing with Yamanashi wine.
Enjoy Yamanashi Wine Too
“Gastronomic Wild” can also be enjoyed with a wine-pairing course that includes Yamanashi wine.
The pairing selected by Hoshinoya Fuji’s sommelier features three wines, including selections from Yamanashi.
It is a special pairing course that lets guests enjoy wines chosen to bring out the character of each dish in the “Gastronomic Wild” dinner, served in carefully selected glassware.
The winter-only “Gastronomic Wild” menu is ¥12,100 per person including tax and service charge, excluding accommodation.
