Among them, two soy sauces designed to have particularly strong affinity with wine were released on Soy Sauce Day, Wednesday, October 1, 2025.
They are the 2025 editions of “SHINKO NOIRE” and “SHINKO BLANCHE.”

Co-Developed with a Saint-Émilion Winery
“SHINKO NOIRE” and “SHINKO BLANCHE” are produced by Yuasa Soy Sauce Co., Ltd., the soy-sauce division of long-established Marushin Honke in Yuasa, Wakayama Prefecture, known as the birthplace of soy sauce.
These special soy sauces were jointly brewed with Adrien David Beaulieu, owner of Château Coutet in Saint-Émilion, France.
Saint-Émilion is one of the world’s sacred wine regions, familiar to wine lovers everywhere.
The two soy sauces are made at historic Château Coutet in Saint-Émilion.
Production there applies winemaking equipment and techniques, making the process somewhat different from traditional Japanese methods.
That difference, however, creates new possibilities. By brewing locally, the soy sauces can be adapted to the local food culture and palate.
The SHINKO brand brings tradition and innovation together.
It is certainly a soy sauce worth noting for wine lovers.
About the Two Soy Sauces
Key features are as follows.
- SHINKO NOIRE — Limited to 290 bottles
SHINKO NOIRE uses French organic soybeans and wheat, along with sea salt from Île de Ré.
It is aged slowly for 12 months in a wine barrel.
The color is a clear, deep black. A gentle sweetness spreads across the palate, followed by a surprisingly light finish.
- SHINKO BLANCHE — Limited to 95 bottles
It uses the same ingredients as SHINKO NOIRE.
The proportions differ, however, with a higher share of wheat, and it is carefully aged in a stainless-steel wine tank.
Its color is pale and the texture gentle.
Delicate sweetness and a toasted aroma enhance the flavor of food.
