Hakkenzan Kitchen & Marche Restaurant Begins Full Glass-Wine Service Featuring Three Wines, Including Hoheikyo Dam-Aged Bottlings!

The restaurant at Hakkenzan Kitchen & Marche will begin full-scale glass-wine service from Wednesday, July 1, 2026, offering three wines including two Hoheikyo Dam-Aged red wines.

Rare wines previously sold only by the bottle will now be available more casually by the glass.

About the Glass-Wine Service

Hakkenzan Kitchen & Marche is a restaurant and shop where guests can enjoy dishes made with rich local Sapporo ingredients alongside views of vineyards and the dramatic Hakkenzan landscape.

Until now, Hoheikyo Dam-Aged Wine and KANONZ had been limited to bottle sales because of their scarcity and strict quality management. The new glass service responds to requests from customers who wanted to try several wines in smaller amounts and enjoy wine more casually.

Flavor Map for the Three Wines

The three wines are:

Kyoko 2020, Red
Flavor: A firm medium-bodied wine centered on Harmo Noir and Cabernet Franc. Character: Firm acidity and tannin provide structure, while dam aging adds maturity and roundness. A deep, rich glass.

Ao no Kioku 2020, Red
Flavor: A clean, medium-bodied wine based mainly on Seibel 13053. Character: Refreshing cool-climate acidity and a touch of wildness. A light, sharp red that does not overwhelm food.

KANONZ BLANC 2025, White
Flavor: A fresh, dry white based mainly on Chardonnay and Riesling. Character: Gentle grape-derived umami and a slowly spreading pleasant bitterness. A lively way to begin a meal.

A “Hoheikyo Dam-Aged Wine Tasting Set,” allowing guests to compare the wines together, will launch at the same time.
